Toto kli\u0161\u00e9 se d\u00edky trend\u016fm posledn\u00edch let uk\u00e1zalo jako nespr\u00e1vn\u00e9 a r\u016f\u017eov\u00e9 \u0161ampa\u0148sk\u00e9 v\u00edno za\u010dali v\u00edce vyhled\u00e1vat znalci i restaurat\u00e9\u0159i. Historicky byla tato oblast zn\u00e1m\u00e1 r\u016f\u017eov\u00fdm n\u00e1dechem sv\u00fdch v\u00edn, kter\u00fd zp\u016fsoboval vliv severn\u00edho podneb\u00ed na zr\u00e1n\u00ed odr\u016fd hrozn\u016f s&nbsp;\u010dernou slupkou a z\u00e1rove\u0148 b\u00edlou du\u017einou. Postupem \u010dasu se vina\u0159i zdokonalili v&nbsp;p\u011bstov\u00e1n\u00ed b\u00edl\u00fdch odr\u016fd a \u201er\u016f\u017eov\u00e9\u201c, vytvo\u0159en\u00e9 \u010derven\u00fdmi slupka, upozadili.<\/p>\n<p>Dnes se v&nbsp;severn\u00edch \u010d\u00e1stech kraje Champagne krom\u011b jin\u00fdch p\u011bstuj\u00ed i \u010derven\u00e9 hrozny. Dv\u011b t\u0159etiny vinic jsou os\u00e1zeny odr\u016fdami Pinot Noir a Meunier, kter\u00e9 jsou pot\u0159ebn\u00e9 p\u0159i produkci r\u016f\u017eov\u00fdch v\u00edn. A\u010dkoliv se v\u011bt\u0161ina t\u011bchto hrozn\u016f pou\u017e\u00edv\u00e1 k&nbsp;v\u00fdrob\u011b klasick\u00e9ho \u201eb\u00edl\u00e9ho\u201c \u0161ampa\u0148sk\u00e9ho, mal\u00e9 procento hrozn\u016f dosahuje tak bohat\u00e9 zralosti, barvy a intenzity, kter\u00e9 je p\u0159edur\u010duj\u00ed k&nbsp;v\u00fdrob\u011b r\u016f\u017eov\u00e9ho \u0161ampa\u0148sk\u00e9ho v\u00edna. Ros\u00e9 pak zauj\u00edm\u00e1 zhruba 10 % z&nbsp;celkov\u00e9 produkce \u0161ampa\u0148sk\u00e9ho. A pr\u00e1v\u011b tato v\u00fdjime\u010dnost d\u011bl\u00e1 z&nbsp;r\u016f\u017eov\u00e9ho exkluzivn\u00ed v\u00edno i mezi \u0161ampa\u0148sk\u00fdmi. <strong>Beno\u00eet Gouez<\/strong>, sklepmistr \u0161ampa\u0148sk\u00e9ho domu Mo\u00ebt &amp; Chandon, k&nbsp;tomu dod\u00e1v\u00e1: <em>\u201eP\u0159ed dvaceti lety bylo v&nbsp;produkci zna\u010dky Mo\u00ebt &amp; Chandon jen 2 &#8211; 3 procenta r\u016f\u017eov\u00e9ho \u0161ampa\u0148sk\u00e9ho. Dnes ros\u00e9 p\u0159edstavuje 10 procent cel\u00e9 produkce v&nbsp;Champagne a u n\u00e1s v Mo\u00ebt &amp; Chandon v\u00fdroba r\u016f\u017eov\u00e9ho \u0161ampa\u0148sk\u00e9ho dokonce p\u0159esahuje 20 procent produkce.\u201c<\/em><\/p>\n<p>R\u016f\u017eov\u00e9 \u0161ampa\u0148sk\u00e9 v\u00edno se dnes vytv\u00e1\u0159\u00ed tzv. scelov\u00e1n\u00edm, tedy m\u00edch\u00e1n\u00edm v\u00edn \u010derven\u00fdch a b\u00edl\u00fdch odr\u016fd hrozn\u016f. Tento postup je jedine\u010dn\u00fd pro v\u00fdrobu v\u00edn v&nbsp;kraji Champagne a \u017e\u00e1dn\u00fd jin\u00fd z&nbsp;vina\u0159sk\u00fdch kraj\u016f jej nesm\u00ed pou\u017e\u00edvat.<\/p>\n<p>\u0160ampa\u0148sk\u00fd d\u016fm Mo\u00ebt &amp; Chandon, s&nbsp;tradic\u00ed sahaj\u00edc\u00ed a\u017e do roku 1743, m\u00e1 ve vytv\u00e1\u0159en\u00ed r\u016f\u017eov\u00fdch v\u00edn dlouholetou tradici. Pro sv\u00e1 r\u016f\u017eov\u00e1 v\u00edna vyu\u017e\u00edv\u00e1 hrozn\u016f obou odr\u016fd &#8211; Pinot Noir a Meunier, ze kter\u00fdch vytv\u00e1\u0159\u00ed ne\u0161umiv\u00e1 \u010derven\u00e1 v\u00edna, kter\u00e1 jsou n\u00e1sledn\u011b scelov\u00e1na s&nbsp;v\u00edny odr\u016fd b\u00edl\u00fdch.<\/p>\n<p>Dominantn\u00ed \u010dervenou odr\u016fdou je tradi\u010dn\u011b Pinot Noir, av\u0161ak sklepmistr \u0161ampa\u0148sk\u00e9ho domu Mo\u00ebt &amp; Chandon Beno\u00eet Gouez za\u010dal v\u00edce pou\u017e\u00edvat odr\u016fdu Meunier, kter\u00e1 obsahuje m\u00e9n\u011b t\u0159\u00edslovin, je chu\u0165ov\u011b zaoblen\u011bj\u0161\u00ed a dod\u00e1v\u00e1 tak v\u00ednu p\u0159i scelov\u00e1n\u00ed \u0161ir\u0161\u00ed paletu barev i chut\u00ed typick\u00fdch pro r\u016f\u017eov\u00e9 \u0161ampa\u0148sk\u00e9.<\/p>\n<p>Zna\u010dka Mo\u00ebt &amp; Chandon si dlouhodob\u011b dr\u017e\u00ed p\u0159edn\u00ed postaven\u00ed mezi producenty r\u016f\u017eov\u00fdch v\u00edn.
