Historie spole\u010dnosti se zac\u030cala psa\u0301t v roce 1893, ac\u030ckoliv whisky, ktere\u0301 tato spolec\u030cnost produkuje, pr\u030cina\u0301s\u030cely pote\u030cs\u030ceni\u0301 chut\u030covy\u0301m poha\u0301rku\u030am milovni\u0301ku\u030am us\u030clechtily\u0301ch destila\u0301tu\u030a uz\u030c mnohem dr\u030ci\u0301ve. <\/strong><\/p>\n<p><strong>Glenmorangie <\/strong><\/p>\n<p>V roce 1843 vznikla ve Skotsku pal\u00edrna Glenmorangie, zn\u00e1ma\u0301 pro svou neuve\u030cr\u030citelne\u030c jemnou a komplexni\u0301 single malt whisky. Ta se destiluje v nejvys\u030cs\u030ci\u0301ch destilac\u030cni\u0301ch kotli\u0301ch, jejichz\u030c dlouhy\u0301 me\u030cde\u030cny\u0301 krk dosahuje stejne\u0301 vy\u0301s\u030cky jako dospe\u030cla\u0301 z\u030cirafa. Di\u0301ky tomu se jen ty nejjemne\u030cjs\u030ci\u0301 a nejc\u030cists\u030ci\u0301 vy\u0301pary dostanou do fina\u0301lni\u0301ho produktu a v\u00fdsledn\u00e1 whisky je lehka\u0301, ovocna\u0301 a elegantni\u0301. Destila\u010dn\u00ed kotle p\u0159ivezl roku 1843 z Anglie zakladatel pal\u00edrny pan William Matheson. Kdy\u017e zjistil, \u017ee v nich vznik\u00e1 vynikaj\u00edc\u00ed whisky, za\u010dal jejich po\u010det zvy\u0161ovat. Z&nbsp;p\u016fvodn\u011b dvou kotl\u016f roz\u0161\u00ed\u0159ila pal\u00edrna za uplynul\u00fdch 175 let kapacitu na kotl\u016f 12. Ka\u017ed\u00fd dal\u0161\u00ed kotel musel b\u00fdt na milimetr p\u0159esnou kopi\u00ed t\u011bch p\u016fvodn\u00edch, aby se zajistila naprosto stejn\u00e1 kvalita whisky. Aktu\u00e1ln\u011b je v&nbsp;pl\u00e1nu roz\u0161\u00ed\u0159en\u00ed o dal\u0161\u00ed dva kotle \u2013 stejn\u011b vysok\u00e9, \u0161irok\u00e9 a v ka\u017ed\u00e9m rozm\u011bru naprosto identick\u00e9.<\/p>\n<p>Jedine\u010dn\u00fd chu\u0165ov\u00fd charakter Glenmorangie, z\u00edskan\u00fd d\u00edky zr\u00e1n\u00ed v sudech popisuje<strong> Paul Malone<\/strong>: <em>\u201e<\/em><em>Pou\u017e\u00edv\u00e1me jednotliv\u00e9 sudy pro zr\u00e1n\u00ed maxim\u00e1ln\u011b dvakr\u00e1t. Z\u00edsk\u00e1me tak ze d\u0159eva sud\u016f optim\u00e1ln\u00ed chu\u0165 pro na\u0161\u00ed whisky. Sudy m\u00e1me od na\u0161ich p\u0159\u00e1tel z&nbsp;Ameriky z&nbsp;bourbonov\u00e9ho odv\u011btv\u00ed. Sud napln\u00edme, nech\u00e1me v&nbsp;n\u011bm zr\u00e1t Glenmorangie 10 let a t\u00edm z\u00edsk\u00e1me chu\u0165ov\u011b velmi sladkou whisky. Po druh\u00e9m sta\u0159en\u00ed v&nbsp;sudu z\u00edsk\u00e1me whisky, kter\u00e1 u\u017e nem\u00e1 tolik sladkosti, ale m\u00e1 v&nbsp;sob\u011b hodn\u011b ovocn\u00fdch t\u00f3n\u016f, kokosu a kv\u011btinov\u00fdch t\u00f3n\u016f. Kdy\u017e se&nbsp;sudy po dvou kolech zr\u00e1n\u00ed skon\u010d\u00edme, prod\u00e1me je k&nbsp;pou\u017eit\u00ed pro ostatn\u00ed zna\u010dky.\u201c<\/em><\/p>\n<p>Zna\u010dka Glenmorangie nech\u00e1v\u00e1 n\u011bkter\u00e9 sv\u00e9 whisky dozr\u00e1vat v&nbsp;odli\u0161n\u00fdch sudech, aby z\u00edskaly osobit\u00fd r\u00e1z. <em>\u201eV devades\u00e1t\u00fdch letech jsme byli prvn\u00ed zna\u010dkou, kter\u00e1 za\u010dala s dozr\u00e1v\u00e1n\u00edm whisky v sudech po portsk\u00e9m. To pak zkop\u00edrovala skoro ka\u017ed\u00e1 pal\u00edrna na sv\u011bt\u011b, ale my byli prvn\u00ed, kdo s t\u00edm p\u0159i\u0161el. M\u00e1me v nab\u00eddce dozr\u00e1v\u00e1n\u00ed v sudech po sherry jako je t\u0159eba na\u0161e dvan\u00e1ctilet\u00e1 Glenmorangie Lasanta, kter\u00e1 je 10 let v bourbonov\u00fdch sudech a posledn\u00ed dva roky v sudech po sherry. Glenmorangie Quinta Ruban je 10 let v bourbonov\u00fdch sudech a posledn\u00ed dva roky v&nbsp;sudech po portsk\u00e9m, co\u017e z n\u00ed d\u011bl\u00e1 chu\u0165ov\u011b bohatou, o\u0159\u00ed\u0161kovou a ko\u0159en\u011bnou whisky. Tak\u00e9 m\u00e1me whisky, kter\u00e1 zraje 10 let v bourbonov\u00fdch sudech a dva posledn\u00ed roky v sudech po francouzsk\u00e9m v\u00edn\u011b ze Sauternes. Ta se jmenuje Nectar D&#8217;or. Je neuv\u011b\u0159iteln\u011b sladk\u00e1, m\u00e1 v sob\u011b kr\u00e9movitost bourbonu a ty posledn\u00ed dva roky j\u00ed daj\u00ed \u00fa\u017easn\u00fd n\u00e1dech brio\u0161ek, croissant\u016f, b\u00edl\u00e9 \u010dokol\u00e1dy a tro\u0161ky mandl\u00ed, co\u017e tuto whisky d\u011bl\u00e1 velmi jemnou a delik\u00e1tn\u00ed,\u201c <\/em>uv\u00e1d\u00ed<strong> Paul Malone<\/strong>.<\/p>\n<p><strong>Ardbeg<\/strong><\/p>\n<p>Ardbeg, druh\u00e1 zna\u010dka spadaj\u00edc\u00ed pod Glenmorangie Company, je pali\u0301rna s bour\u030clivou a velmi v\u00fdraznou historii\u0301 i chut\u00ed. Po ne\u030ckolika zme\u030cna\u0301ch sve\u0301ho majitele se dver\u030ce pal\u00edrny v roce 1983 uzavr\u030cely a ac\u030ckoliv se povedlo provoz po pa\u0301r letech nastartovat, v roce 1991 se uzavr\u030cela znovu. V roce 1997 ji koupila spolec\u030cnost Glenmorangie Company a zalo\u017eila v&nbsp;n\u00ed Ardbeg Committee. Tento spolek obdivovatel\u016f Ardbeg whisky m\u00e1 za \u00fakol jedin\u00e9 \u2013 zajistit, aby se dver\u030ce Ardbeg pali\u0301rny jiz\u030c nikdy nezavr\u030cely.<\/p>\n<p>Za dvacet let fungov\u00e1n\u00ed ve spole\u010dnosti Glenmorangie Company se cel\u00e1 pal\u00edrna zm\u011bnila k nepozn\u00e1n\u00ed. Prob\u011bhly a st\u00e1le tu prob\u00edhaj\u00ed obrovsk\u00e9 investice. Ve v\u00fdstavb\u011b jsou pr\u00e1v\u011b nov\u00e9 prostory, kter\u00e9 umo\u017en\u00ed zdvojn\u00e1sobit kapacitu. <em>\u201eZm\u011bnila se popt\u00e1vka po na\u0161\u00ed whisky, a tak p\u0159izp\u016fsobujeme pal\u00edrnu, abychom tuto popt\u00e1vku uspokojili,\u201c<\/em> \u0159\u00edk\u00e1<strong> Paul Malone<\/strong>. Nejpatrn\u011bj\u0161\u00ed rozd\u00edl ve fungov\u00e1n\u00ed pal\u00edrny za posledn\u00edch 20 let je podle n\u011bj konzistentn\u00ed kvalita. P\u0159ed rokem 1997 byl Ardbeg \u010dasto pou\u017e\u00edvan\u00fd do m\u00edchan\u00fdch whisky. Dneska m\u00e1 Ardbeg vysokou \u00farove\u0148 v nem\u011bnn\u00e9 kvalit\u011b. <em>\u201eKdy\u017e z\u00e1kazn\u00edk ochutn\u00e1 v\u0161echny Ardbegy, jejich chu\u0165ov\u00fd profil se dost m\u011bn\u00ed, ale kdy\u017e si koup\u00ed stejnou l\u00e1hev kdekoliv na sv\u011bt\u011b, bude chutnat stejn\u011b ve Skotsku, Singapuru nebo Praze,\u201c<\/em> uv\u00e1d\u00ed<strong> Paul Malone<\/strong>.<\/p>\n<p>Nejv\u00fdrazn\u011bj\u0161\u00ed vlastnost whisky Ardbeg je jej\u00ed kou\u0159ovost. Ta se rozv\u00edj\u00ed hned od za\u010d\u00e1tku p\u0159i pr\u00e1ci se sladov\u00fdm je\u010dmenem. P\u0159i sladov\u00e1n\u00ed je slad naku\u0159ov\u00e1n na 55 ppm (pom\u011br \u010d\u00e1stic aromatick\u00fdch fenol\u016f na mili\u00f3n \u010d\u00e1stic), co\u017e je v\u00edce ne\u017e Laphroig, Lagavulin, Bowmore nebo jak\u00e1koliv dal\u0161\u00ed whisky ze skotsk\u00fdch&nbsp;ostrov\u016f.<\/p>\n<p><em>\u201eU Glenmorangie je chu\u0165 velmi kr\u00e9mov\u00e1, ovocn\u00e1, sladk\u00e1, c\u00edt\u00edte hodn\u011b vanilky, je to velmi sladk\u00e1 celistv\u00e1 chu\u0165, zat\u00edmco Ardbeg je velmi nakou\u0159en\u00e1. Ale i ta nakou\u0159enost je v\u017edy velmi harmonick\u00e1. V\u017edycky v n\u00ed uc\u00edt\u00edte citrusy, slaninu, ban\u00e1n i uzen\u00e9ho lososa. Kdy\u017e se pod\u00edv\u00e1te na chu\u0165ov\u00fd profil obou, tak my tomu \u0159\u00edk\u00e1me Kr\u00e1ska a Zv\u00ed\u0159e. Glenmorangie je ta kr\u00e1ska \u2013 je elegantn\u00ed, m\u00e1 spoustu t\u011bch sladk\u00fdch, bujn\u00fdch chut\u00ed. Zat\u00edmco Ardbeg je to Zv\u00ed\u0159e, kde je hodn\u011b nakou\u0159en\u00e9 chuti. Ob\u011b whisky zastupuj\u00ed velmi rozd\u00edln\u00e9 \u010d\u00e1sti chu\u0165ov\u00e9ho spektra. Kdy\u017e d\u011bl\u00e1te ochutn\u00e1vku, v\u017edycky mus\u00edte za\u010d\u00edt s Glenmorangie, proto\u017ee je v n\u00ed mnoho lahodn\u00fdch a jemn\u00fdch chut\u00ed, kter\u00e9 chcete uc\u00edtit a ocenit jejich slo\u017eitost a komplexnost, zat\u00edmco kdy\u017e p\u0159ejdete na Ardbeg, jde o tu kou\u0159ovost a intenzitu.
